Pho Saigon 8 at 5650 Spring Mountain one block East of Jones (http://www.usmenuguide.com/phosaigon8.html) best Pho in town.
Capital Seafood at 4215 Spring Mountain Rd one block West of Valley View. Great Chinese Seafood at a reasonable price. Mon-Fri lunch specials are $5.95 to $7.95. Their Steamed Flounder is my favorite.
Orchids Garden at 5485 W Sahara Ave on the Corner of Sahara and Lindell (between Jones and Decatur). Best Dim Sum in town. Dim Sum served daily not just on Sunday.
Oyshi Sushi at 7775 S Rainbow Blvd. just South of Robindale. Located in the SW but worth the drive. Best All You Can East Sushi. They also have a lot of non-sushi offerings for the less adventurous.
Little Buddha (in the Palms) – awesome sushi and the best saketinis!
Drais (in Bill’s Gamblin’ Hall & Saloon) – if you want a nice steak dinner, Drais is the spot. The walk through the smelly casino to get there is worth it.
Stack (in the Mirage) – Menu is excellent. Try the Hot Rocks.

Voodoo Lounge (in the Rio) – you can’t beat the views of the strip from here

Penn & Teller magic/illusion show featured on Wired
Cirque du Soleil’s O is the best Vegas show I’ve seen.
Siegfried & Roy’s Secret Garden and Dolphin Habitat looks nice – lions and tigers and dolphins; oh my!

RailsConf Running group -Meeting 6:15am Mon and 6:45am Wed in front of the Las Vegas Hilton. Get some exercise and meet some folks before a long day of RailsConf’ing! All paces and abilities welcome.
